Certification: Occupational Certificate: Cook (NQF Level 4, SAQA ID 102296
Duration: One year (6 months theory and 6 months of work experience)
Entrance Requirement:
National Senior Certificate (NSC)
or National Senior Certificate Vocational (NCV) or equivalent.
Learners who have achieved Grade 11 may also apply.
International Certification Elective:
Students can elect to simultaneously enrol for the international award for Professional Cook offered by Highfield Qualifications in the United Kingdom.
The international study programme leads to the award of Professional Cook.
COURSE OVERVIEW
Commis Chefs are reliable, quick thinking and creative individuals that play an integral role in the operations of a commercial kitchen. A Commis Chef assists a section chef. The role is made up of several responsibilities ranging from food preparation, cooking, assisting with cleaning, stock rotation and the maintenance of food safety standards.
As a Commis Chef you are able to fulfil the following roles:
- Assistant Chef
- Line Cook
- Bakers
- Head Cook
- Personal Chef

- Nutrition, diets and allergen special awareness
