APPRENTICESHIP

Certification: Occupational Certificate: Chef (NQF Level 5, SAQA ID 101967)
Duration: 3 Year (18 months theory and 18 months of work experience)  
Entrance Requirement:
National Senior Certificate (NSC)
or National Senior Certificate Vocational (NCV) or equivalent.
Learners who have achieved Grade 11 may also apply.
International Certification Elective:
Students can elect to simultaneously enrol for the international award for Professional Chef offered by Highfield Qualifications in the United Kingdom.
The international study programme leads to the award of Professional Chef in Supervision.

COURSE OVERVIEW

Culinary professionals are creative, have a strong work ethic and have manual dexterity as well as physical endurance.

Chefs fulfil a number of exciting roles across the globe which may include:

  • Executive, Sous Chef or Chef de Cuisine

  • Kitchen equipment and knife skills
  • Workplace standards and professional development
  • Culinary numeracy and units of measurement
  • Nutrition, diets and allergen special awareness
  • Environmental awareness
  • Kitchen operation and food production
  • Menu planning and recipe costing
  • Cold food preparation and presentation
  • Hot food preparation and presentation
  • Preparing, cooking and finishing dishes
  • Work Experience I, II, III

Occupational Certificate:
Chef with Highfield Qualifications Awards:
